Keep a previously cooked sweet potato and pre-made pesto in the fridge, so you can whip up this sweet potato pesto microwave egg bake in just 3 minutes. Paleo + Whole30 compliant
- Prep Time: 2 minutes
- Cook Time: 1 minute
- Total Time: 3 minutes

Ingredients
- 2 tablespoons previously cooked mashed sweet potato
- 1 Eggland’s Best egg
- 1 tablespoon pesto (find my homemade walnut pesto recipe here)
Instructions
- Lightly grease one small ramekin with oil of choice
- Mash sweet potato in the bottom of the ramekin, distributing evenly
- Crack one egg over the top and cover with a paper towel
- Microwave for 30 seconds
- Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave uncovered another 30-40 seconds until egg is fully cooked
- Let cool slightly, top with pesto, and serve

Instructions
- Lightly grease one small ramekin with oil of choice
- Mash banana into the bottom, distributing evenly
- Combine the almond butter, cocoa powder, maple syrup or raw honey, then working in small spoonfuls, dollop evenly over the top of the mashed banana
- Crack one egg over top
- Cover with a paper towel and microwave for 30 seconds *Note: you may want to place ramekin on a microwave-safe plate, as banana may spill over a bit while cooking
- Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave uncovered another 35-45 seconds until egg is fully cooked
- Let cool slightly then top with sliced strawberries and serve
