  1. Lightly grease one small ramekin with oil of choice
  2. Mash sweet potato in the bottom of the ramekin, distributing evenly
  3. Crack one egg over the top and cover with a paper towel
  4. Microwave for 30 seconds
  5. Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave uncovered another 30-40 seconds until egg is fully cooked
  6. Let cool slightly, top with pesto, and serve
