Chunky Monkey Microwave Egg Bake

This breakfast is more like dessert, without the unnecessary sugar or guilt! Chunky monkey microwave egg bake is a 3 minute treat with healthy ingredients – packed with fresh fruit, healthy fat, and protein.




  1. Lightly grease one small ramekin with oil of choice
  2. Mash banana into the bottom, distributing evenly
  3. Combine the almond butter, cocoa powder, maple syrup or raw honey, then working in small spoonfuls, dollop evenly over the top of the mashed banana
  4. Crack one egg over top
  5. Cover with a paper towel and microwave for 30 seconds *Note: you may want to place ramekin on a microwave-safe plate, as banana may spill over a bit while cooking
  6. Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave uncovered another 35-45 seconds until egg is fully cooked
  7. Let cool slightly then top with sliced strawberries and serve


*to make Whole30 compliant, omit the sweetener and you can also omit the cocoa powder if desired
