This savory ramekin microwave breakfast is packed with leafy greens, protein, and avocado. It’s a healthy and quick power meal in minutes.




  1. Pack spinach in the bottom of a small ramekin, pressing down and distributing evenly to create a flat surface
  2. Add 1/2 teaspoon water, then chopped deli ham or meat of choice
  3. Crack one egg over the top
  4. Cover with a paper towel and microwave for 30 seconds
  5. Gently swirl any remaining uncooked egg around the ramekin (careful, it could be hot) and microwave another 30 until egg is fully cooked
  6. Let cool slightly and serve with sliced avocado on top
