I used to be a morning person. I would peacefully wake up in my matching pajamas (on my own time), sip on a hot cup of coffee, make a breakfast from scratch, and slowly enjoy my hot meal while watching some mindless morning show.

Fast forward to present day, mornings are different but sorta the same…let me explain.

When my husband was deployed for over a year, I had to drastically revamp my morning routine. My mornings caring for a one and three year old felt chaotic and rushed, and something needed to change before I started going completely grey.

The first month or two of mornings while solo parenting meant waking up in my raggedy (non-matching) pajamas to trains crashing into floorboards, scrambling to get food on the table for hungry tummies before a meltdown, pouring a cup of coffee, and hurrying to wrangle the boys to get ready. We’d have at at least two meltdowns before bolting out the door, chugging my (now freezing cold) coffee.

So what did this momma start trying? 5:15 am wake up calls.

These ‘before-the-sun-comes-up’ wake up calls mean starting the day off right – plan out my day, sip my coffee, spend time reading a devotional, and set my mindset for being a cool, calm, collected person. This has been a game changer for me.

Now mornings are so different – so much BETTER. I’m just a little less cranky when my boys’ feet hit the ground they insist on playing trains. Then swords. Then hide-and-seek. Then legos. They also insist that momma plays with them. Meanwhile, I’m trying to get out the door before 8am and the struggle is real (even if I have a more peaceful demeanor).

That’s why I love these paleo strawberry banana cereal bars. Quick breakfasts are clutch when I need to give the kiddos something fast so we aren’t still lagging around all morning.

strawberry banana cereal bars ingredients

One of the reasons why I love Eggland’s Best eggs is because they pair so well with a ton of yummy ingredients for breakfast goodness. These nutrition-packed eggs are the perfect ingredient for healthy baked goods that I can feel good about. They have 25% less saturated fat and fewer calories than ordinary eggs!

Not only are these paleo strawberry banana cereal bars completely delicious, they’re also grain free, dairy free, and naturally sweetened. And even better? Kids are guaranteed to go gaga over them.

strawberry banana cereal bars recipe steps

Made with SIMPLE ingredients people – I’m talking ripe bananas, freeze-dried strawberries (they’re SO easy to find nowadays), sliced almonds, cashew butter, coconut flour, and Eggland’s Best eggs. BOOM. Healthy homemade cereal bars made in 30 minutes flat.

I’ll leave you with some mom to mom advice: take some stress out of your morning and make these paleo strawberry banana cereal bars with Eggland’s Best eggs ASAP (and try waking up earlier than everyone else for al little ‘you’ time).

These paleo strawberry banana cereal bars are a simple, grab-and-go breakfast bar made with natural ingredients and under 30 minutes. Both kid and adult approved!

  • Author: Physical Kitchnesss
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes
  • Yield: 12 bars 1x

Ingredients

Scale
  • 2 large ripe bananas
  • 3 heaping tablespoons cashew butter
  • 2 Eggland’s Best egg whites
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon coconut flour
  • 1/2 cup sliced almonds
  • 1/8 teaspoon salt
  • 1 ounce dehydrated strawberries

Instructions

  1. Preheat oven to 350 degrees
  2. Place dehydrated strawberries into a small food processor or mini chopper and process until broken down into crumbles
  3. Combine the ripe bananas, cashew butter, egg whites, and vanilla extract in a medium bowl. Mix well
  4. Add the coconut flour and salt, and mix well to incorporate. Fold in the sliced almonds
  5. Grease an 8×8″ pan. Divide the batter in half
  6. Pour half of the batter into the pan and spread evenly (it will be very thin once spread)
  7. Sprinkle the dehydrated strawberries evenly over the top
  8. Pour the remaining batter over the top of the dehydrated strawberries. Carefully spreading to cover
  9. Bake for 20 minutes then let cool before cutting into bars

Notes

*if using a pan larger than 8×8, the batter will likely not be enough to evenly spread – consider doubling the recipe

These are delicious! Not sure why they are called cereal bars as there is no cereal in them. Wondering how to store them. Seems either I didn’t bake them long enough or they get softer when stored in an airtight container??

These look great! Have you had any luck freezing them? How long do they stay on the counter if not frozen? Can’t wait to try them this summer! Thank you for the delicious recipes.
