Flourless Peanut Butter & Strawberry Chia Bars

These gluten free, flourless peanut butter bars are covered in a naturally sweetened strawberry chia jam

These grainless, flourless, naturally sweetened peanut butter & strawberry chia bars are a healthy, decadent snack or dessert for all pb&j lovers.

Instructions

  1. Preheat oven to 350 degrees
  2. To make the chia jam, place the strawberries and honey into a blender or mini food processor and blend until strawberries are broken down into a thick liquid
  3. Remove the strawberry liquid and pour into a small bowl. Add the chia seeds and mix well. Let sit for at least 10 minutes
  4. Combine the peanut butter, eggs, and maple syrup. For best results, beat for one minute, until dough is slightly crumbly. You can also mix by hand if necessary
  5. Press the peanut butter dough in a 9×12″ jelly roll baking sheet pan like this one HERE, spreading evenly throughout
  6. Place into the oven for 10 minutes
  7. Remove the pan from the oven and add the chia jam, spreading quickly and evenly
  8. Place the pan back into the oven for an additional 10 minutes
  9. Remove and let cool before cutting into bars
  10. Keep in the refrigerator

Notes

Opt for a thicker peanut butter or nut butter of choice for this recipe. Thinner, runnier nut butters will not yield the best results.
