Chia Seed Pudding 8 Ways: Cinnamon Apple Crumble Chia Pudding

Ingredients
3/4 cup almond milk or light coconut milk
3 tablespoons chia seeds
1/2 teaspoon cinnamon
1/2 teaspoon pure maple syrup
Sautéed Apple
1 small apple of choice or 1/2 larger-sized apple
1/2 teaspoon coconut oil
1/4 teaspoon cinnamon
Homemade Crumble
1 tablespoons old-fashioned oats
2 tablespoon chopped pecans
2 tablespoons almond flour
2 teaspoons coconut sugar
1/4 teaspoon cinnamon
1 tablespoon egg white
Instructions
Combine the milk, chia seeds, cinnamon, and pure maple syrup. Mix well
Let sit for 5 minutes then mix again to ensure chia seeds don’t settle to the bottom
Meanwhile, chop the apple and add to a small pan. Turn heat to medium-high and add the coconut oil and cinnamon. Sauté for roughly 8 minutes, then turn heat to medium-low, cover, and heat another 10-15 minutes until apple is soft and tender. Set aside
In a small bowl, whisk the egg white until slightly frothy, then add the oats, pecans, almond flour, coconut sugar, and cinnamon. Mix well
Wipe the previous pan clean then add the crumble ingredients. Heat slightly under medium-high for roughly 2 minutes. Flip every 2 minutes for a total of 8 minutes, or until crumble is lightly toasted
Once all chia seeds have soaked up the milk, layer in the sautéed apple and toasted crumble. Or refrigerate all components separately to serve later

Chia seed pudding will keep well for up to a week in the refrigerator
