In a separate bowl, combine the maple syrup, coconut milk, and eggs
Pour the wet ingredients into the bowl of dry ingredients, then add the mash sweet potato and mix well
Place the batter in a parchment lined or greased 8×8 baking dish and spread evenly
Options: add the peppermint oil or extract to the batter before adding to the baking dish OR sprinkle the walnuts on top of the batter once spread OR add chocolate chips before/after baking. You could also do all three!
Bake for 20 minutes
Let cool then cut. After the first day, store in the refrigerator for optimal shelf life
