Fudge yeah! Fudge and the holidays go hand in hand, it’s just the way life works. And this paleo peppermint fudge is THE fudge recipe of the century. So rich and decadent, but made dairy free and sweetened naturally. You won’t want to miss this twist on a holiday classic!
My parents’ neighbors think fudge is a currency. You see, my dad is one of those dudes that can’t sit still and relax for more than 16 seconds, so whenever a flake of snow touches the driveway, he’s out there shoveling/sweeping/snow blowing to his heart’s content. Luckily for our elderly neighbors, he lives for double duty snow removal.
So every time I head back home for the holidays, I can expect my mom’s fridge to be fully stocked with next-door-Vera’s famous fudge.
Funny thing is, my dad doesn’t eat fudge.
Even funnier – my mom tells Vera he loves it, just so she can reap the benefits.
Do you see where I get all my tricks? #genius
And you won’t believe the tricks I have up my sleeve with this paleo peppermint fudge. The richness comes from a combination of coconut butter and cashew butter – IT’S JUST SO DECADENT. Add in a ‘lil cocoa powder and some peppermint extract and BOOM – fudgy magic.
I didn’t even have to shovel snow for it…..Or lie to sweet little ladies next door (sorry mom).
If chocolate and peppermint is your gig in December, this one’s for you. A square of this paleo peppermint fudge is pretty much perfection after a cup of your morning brew, or before lunch, or mid-afternoon, perhaps after dinner, or let’s just say a little sweet treat before bed. Yeah, I can’t help but snack on it all day long.
This recipe is easy and delicious. Even gives Vera a run for her money…
