  1. Preheat oven to 325 degrees
  2. Combine the dry ingredients, then add the wet ingredients
  3. Mix well until a thick dough forms
  4. Fold in the walnuts
  5. Scoop the dough with a tablespoon-sized cookie scoop and roll into balls, then place on a parchment-lined or non-stick baking sheet
  6. Press the balls using the bottom of a glass, until they are roughly 1/2″ thick
  7. If desired, sprinkle with more cinnamon to top
  8. Bake for 12 minutes, then transfer to a cooling rack
