A word of warning – don’t continue reading if you aren’t into highly addicting treats made with 3 simple ingredients. Actually, if easy paleo (and vegan) desserts aren’t your thing, shield your eyes from these food porn photos. And if caramel is something you don’t do, then I’m not sure we can’t be friends. Simply stated, this 3 ingredient paleo espresso caramel sauce is EVERYTHING.

There just might be a Santa Clause. I still think the tooth fairy buzzes around at night. And the Cadbury bunny really does cluck like a chicken. All of these things are still believable in my world – what’s unbelievable is this paleo espresso caramel sauce.

I whipped this ‘lil creation together not really confident it would do what I was hoping it would do – I know, no faith. But OH MY LAWD did I surprised myself. I can’t even describe how flippin’ easy and amazzzzzingly addicting this caramel sauce is. I want is smothered on everything.

Just imagine a dip-able, drizzle-able vegan and paleo caramel that’s the perfect sweetness with notes of espresso in every lick/drip/spoonful. Right? RIGHT?!?!?

Ok naturally I was destined to love it because anything coffee flavored is a favorite of LIFE. Everything tastes better with a hint of coffee flair, right?! Serve this paleo espresso caramel sauce over fruit, ice cream (or banana soft serve), as a dip for gluten-free pretzels, or by itself!

Wait, banana soft serve?! Yes, if you haven’t heard of it, you’re missing out. Also JUST as easy – simply blend 2 frozen bananas with 2 tablespoons full fat coconut milk (or coconut cream) and throw the mixture back into the freezer for an hour or two, just until the ‘soft serve’ can be scooped like ice cream. If the banana mixture is frozen solid, keep it at room temp until soft enough to scoop. Then of course you gotta top it with the heavenly caramel stuff. Game changer people.

And don’t worry about this paleo espresso caramel sauce tasting just like pureed dates. Let me assure you, the coconut cream combined with the espresso or strongly-brewed coffee makes it less ‘date’ than you’d think. Don’t make ANY assumptions until you’ve had your first spoonful.

This obsession will no doubt be staple in my life, probably like, forever. I’m SO happy it turned out and hope you love it too!

Ingredients

Scale
  • 10 medjool dates, pitted
  • 2 teaspoons full-fat coconut milk
  • 1 cup espresso or strongly brewed coffee

Instructions

  1. Add the pitted medjool dates, coconut milk, and espresso/coffee to a small food processor or blender
  2. Process until well combined and a creamy sauce forms, scraping down the sides between blending if necessary
  3. Serve immediately or store in the refrigerator for later. When ready to serve, bring to room temperature or warm slightly to bring back to a sauce-like consistency

Notes

Serve this as a dip for fruit, over ice cream, with gluten free pretzels, or as a sweetener for baked goods
