My little ones love ‘picnic’ dinners. Those sweet boys think I’m the coolest mom in the world when I set a bunch of stuff on a tray and let them pick and choose in the driveway as we play until the sun goes down. Little do they know it’s actually my lazy mom dinner hack when I have absolutely no energy to cook anything.
Truth be told, I loved the convenience of picnic dinners, but didn’t always feel like I was offering any good stuff to the kiddos. It was usually a hodgepodge of random stuff I found in the fridge or pantry – but that challenge is finding healthy stuff that’s mess-free and easy to grab for little hands. I mean, grapes and plantain chips are great and all, but I wouldn’t really consider it a balanced meal.
It wasn’t until I whipped up these easy and healthy lunchbox deli wraps, using organic, nitrate-free deli meat from Applegate, that I realized how easy picnic dinners could be. So of course I had to share them with ALL the moms of the world sending their kiddos off to school in a few short weeks. These five deli meat ideas are not only easy, but packed with nutrient-dense food. Paleo, allergy-friendly ideas that bust through lunchbox boredom and will leave you feeling like that Pinterest super mom we all know you kinda want to be but don’t want to put the effort towards.
I’ve even started making these for my own lunches. I may look like a 30-something mom of two, but when it comes to lunch, I’m really just a seven year old. They’re just SO easy and I am such a big fan of all Applegate products, it’s hard not to want these lunchbox deli wraps on repeat.
This deli meat is the best you can buy – no weird ingredients you can’t pronounce, no nitrates, no fillers or artificial junk, and organic – basically a big Physical Kitchness stamp of approval. And my kiddos love these lunchbox deli wraps too. They are an insanely easiest, squeaky clean lunch option that will fuel your kiddos with protein, veggies, and healthy fats to be the best at their academics…or recess and stuff 😉
