Instant Pot Artichokes with 3 Paleo Dipping Sauces

A perfect paleo and Whole30 appetizer. These Instant Pot artichokes are SO easy to make, with three amazing dipping sauces



  1. Cut the 2 inches off the top of each artichoke and slice off most of the stem. Using kitchen sheers, snip off the top of every leaf
  2. Pour 1 cup of water in the Instant Pot
  3. Place the artichokes cut side down on top of the Instant Pot trivet. Close the lid and seal the valve. Set the Instant Pot on manual mode for 10 minutes
  4. Once the 10 minutes is up, turn the valve to release the pressure and open the lid once all the pressure is released. Remove the artichokes with kitchen tongs, as they will be very hot
  5. Pluck each leaf and dip the base into a sauce of choice, then scrape the meat off each leaf with your front teeth and discard the remaining leaf
  6. To consume the artichoke heart, cut the artichoke in half, then gently scrape out the ‘fuzz’ inside and discard. Gently peel the leaves around the heart off and consume the soft inner heard and leaves around it
