Gluten Free Slow Cooker Bananas Foster French Toast
This gluten free bananas foster french toast is simple, naturally sweetened, and the perfect slow cooker breakfast. Dairy free too!

Ingredients
French Toast
1 1/2 loaves gluten free bread (I used 12 ounce loaves – totally about about 18 ounces)
6 eggs
2 cups vanilla almond milk
2 1/2 teaspoons cinnamon
2 tablespoons pure maple syrup (add more syrup to sweeten if you are omitting the bananas foster topping)
1 1/2 tablespoons ghee to grease bottom and sides of slow cooker
Bananas Foster
1/4 cup coconut sugar
1/4 cup ghee
2 tablespoons full fat coconut milk
2 large bananas, sliced
Instructions
Cut bread slices in half (or fourths if desired)
Grease bottom and sides of a 4-5 quart slow cooker with 1 1/2 tablespoons ghee, then layer in the bread
Whisk the eggs in a medium bowl and add in the almond milk, cinnamon, and maple syrup
Slowly pour the egg mixture in the slow cooker, covering the bread evenly
Close the lid and cook on high for 2 hours or low for 4 hours
Once french toast is done cooking, start making the bananas foster topping
Heat ghee and coconut sugar in a small pot over medium-high. Whisk vigorously until sugar has almost dissolved completely, then quickly add in the coconut milk and continue whisking a few more seconds
Once mixture is combined and thickened, reduce heat to low, then add the sliced bananas. Gently stir or flip the bananas to evenly coat, then serve bananas foster over the french toast
