5:35 am. I don’t think I’ve slept past 5:35 am in four and a half years. True story.

My kiddos are early risers and at first it was hard. Like, “oh-my-gosh-little-people-you-are-killin’-me”. But after about year three, I kind of got used it it. (Yes, it took three-ish very exhausted years for this to become my ‘normal’).

I typically go through the same morning routine every single day.

  1. Get coffee in hand asap
  2. Make the kids’ eggs
  3. Turn on Disney Jr and try to sneak in 15 minutes ‘getting ready’

Getting ready meaning brush my teeth, wash my face, put my hair in a messy ponytail. Maybe, JUST MAYBE, a swipe of mascara if I’m lucky. And pants, don’t forget pants.

But lately I’ve been trying to relax a bit more during weekend mornings the mornings. It helps that my boys aren’t babies anymore and they will entertain themselves a bit before saying ‘mom’ 215 times for breakfast requests.

Which is why this gluten free bananas foster slow cooker french toast is perrrrrrrfect for low-key mornings playing with my kids, enjoying my (second) cup of coffee, and chillaxing in my fuzzy pjs with no agenda.

This crockpot french toast is gluten free and naturally sweetened. It's the easiest family-friendly breakfast ever!

And when the occasional out of town guest comes to stay (eh hem, I’m talking about you Gammie), this hot breakfast is a hit!

Plus it’s easy, like REALLY easy to just throw in your crockpot and wait for the magic to happen. The best part though – obvi the warm bananas foster to top it all off. It’s the perfect way to sweeten the deal when it comes to warm, comforting breakfasts.

All you need for this recipe are a few loaves of gluten free bread, eggs, a ‘lil maple, and cinnamon. Then of course the paleo bananas foster topping with includes bananas, ghee (or butter), canned coconut milk, and coconut sugar. Guys, this gluten free slow cooker bananas foster french toast is so good. So soooooo good.

Gluten Free Slow Cooker Bananas Foster French Toast

This gluten free bananas foster french toast is simple, naturally sweetened, and the perfect slow cooker breakfast. Dairy free too!

Ingredients

French Toast

  • 1 1/2 loaves gluten free bread (I used 12 ounce loaves – totally about about 18 ounces)
  • 6 eggs
  • 2 cups vanilla almond milk
  • 2 1/2 teaspoons cinnamon
  • 2 tablespoons pure maple syrup (add more syrup to sweeten if you are omitting the bananas foster topping)
  • 1 1/2 tablespoons ghee to grease bottom and sides of slow cooker

Bananas Foster

  • 1/4 cup coconut sugar
  • 1/4 cup ghee
  • 2 tablespoons full fat coconut milk
  • 2 large bananas, sliced

Instructions

  1. Cut bread slices in half (or fourths if desired)
  2. Grease bottom and sides of a 4-5 quart slow cooker with 1 1/2 tablespoons ghee, then layer in the bread
  3. Whisk the eggs in a medium bowl and add in the almond milk, cinnamon, and maple syrup
  4. Slowly pour the egg mixture in the slow cooker, covering the bread evenly
  5. Close the lid and cook on high for 2 hours or low for 4 hours
  6. Once french toast is done cooking, start making the bananas foster topping
  7. Heat ghee and coconut sugar in a small pot over medium-high. Whisk vigorously until sugar has almost dissolved completely, then quickly add in the coconut milk and continue whisking a few more seconds
  8. Once mixture is combined and thickened, reduce heat to low, then add the sliced bananas. Gently stir or flip the bananas to evenly coat, then serve bananas foster over the french toast
