“Millions of peaches, peaches for me. Millions of peaches, peaches for free.” Anyone, anyone? Maybe I am totally aging myself but if you didn’t catch it, that song is the classic called “Peaches”, released in 1995. I was a 5th grader, with a bowl cut (don’t ask, I’m still scarred), and in love with a song all about peaches.
When I found a bag of peaches for $1.99 I immediately went back to 5th grade (minus the training bra and bad hair) and decided I needed to make something with this beautiful in-season fruit. P.S. I still wear a training bra and usually have bad hair – but that’s because I have a one-year-old. Annnnnyway….
I love myself a delicious green smoothie and I always make it a goal to get spinach, kale or chard in my diet once a day (no really, I do. It’s not just a tag line). What I don’t like about most green smoothie recipes is the ridiculous amount of fruit in the ingredient list. Yes, fruit is usually required for green smoothies not to taste like moldy seaweed, BUT if you are loading your smoothie with tons of sugar (even if it’s natural), you defeat the purpose of trying to be uber healthy when you create a huge spike in your blood sugar. And sugar makes your brain want more sugar, and more sugar, and MORE SUGAR! Besides, when do you have two bananas, one apple, a handful of blueberries, one mango, and an orange in one sitting? I rest my case.
This ginger peach and kale power smoothie is loaded with good stuff and not loaded with a ton of sugar. Chia seeds, ginger, and kale, plus one peach and a half of a banana for the sweet factor. Your body will thank you when you fuel it with fiber, magnesium, and vitamins A, C, K and B6.
Just throw everything in a blender and watch the magic happen. Because sometimes when a peach and kale love each other, they make one beautiful smoothie.
I keep my ginger in the freezer so it’s easy to grate (plus, freezing keeps it fresh). If coconut milk isn’t your thing, you can substitute for almond or cashew milk. Kale can be swapped for spinach, lemon juice for lime juice, etc. Basically, just make it your own! Anchovies? Fine. Nail polish remover? Wouldn’t recommend it…Just don’t forget the peach and ginger.

PrintGinger Peach & Kale Power Smoothie

- Yield: 1 1/2 cups 1x
Ingredients
- 1 ripe peach
- 1 handful of kale (about 1 1/2 cups)
- 1/2 banana
- 2 teaspoons grated ginger
- 1 tablespoon lemon juice
- 1 tablespoon chia seeds
- 1 cup coconut milk
Instructions
- Grate ginger and squeeze 1 tablespoon of juice from a lemon. Add all ingredients in a blender and combine until smooth.
- *Optional – add more coconut milk or liquid agent for a thinner smoothie. Can also add ice.

Kale is a toughie for some. Spinach is much easier to eat and doesn’t have that bite that kale can have. Just a suggestion 🙂

YUM! This combination looks so good. I always forget to add ginger in my smoothies, but it’s such a great addition. To get even more veggies in my green smoothies, I’ve started to add a handful of broccoli florets… sounds weird, I know, but you can’t even tell they are in there!
Oooo I love the idea of adding broccoli. I never could because I had a cheap-o blender and couldn’t handle the chunks. But since I’ve upgraded to my baby (aka Vitamix) I will have to try that!
