Easy Sheet Pan BLT Chicken (paleo + Whole30)

This paleo and Whole30 compliant sheet pan chicken is SO easy and you won't even miss the bread. A delicious dinner in 30 minutes or less



  1. Preheat oven to 400 degrees
  2. Chop the bacon and make a large tinfoil ‘tray’ to place on one half of a large baking sheet (see photos above). The tinfoil should have a lip on all four sides to avoid any bacon grease from leaking out
  3. Place the chopped bacon evenly in the bottom of the tinfoil
  4. Add the chicken breasts and grape tomatoes to the other side of the baking sheet, then drizzle with olive oil to coat evenly. Sprinkle with salt and pepper if desired
  5. Place the baking sheet into the oven for 25 minutes
  6. Remove from the oven. If tomatoes are not broken and slightly blistered, gently poke each one with the tip of a knife to release the pressure
  7. Layer the chopped lettuce, followed by the chicken and tomatoes. Add the cooked bacon to top and drizzle with mayonnaise
  8. Serve immediately
