I’m totally digging these chicken apple pecan breakfast sausages for their unique twist of nutty flavor using Purely Pecans Pecan Butter. This recipe is so simple, not to mention easy to make a reheat for later.
Plus the kiddos are big fans. My oldest rolled in the house after preschool saying, “mmmmm some-fing smells good!” right after I pulled these babies out of the oven. Then the kiddos double “mmmm’d” after the first bite too. #iwin
Also “mmm’ing” were the dinosaur, Mickey Mouse, bunny, and Batman who joined our table. Yes, I serve a crowd these days (and love cleaning food from plush mouths). But hey, if the kids want to eat these apple turkey pecan breakfast sausages with all their little friends as an after school snack, I’m not complaining!
These healthy, protein-packed sausages are not only a cinch to make, they are packed with good-for-you stuff – starting with Purely Pecans Pecan Butter. These chicken apple pecan breakfast sausages are a lean and healthy breakfast packed with rich pecan flavor, sweet apples, and cinnamon. Paleo, Whole30 compliant, and eggless!
- Prep Time: 5 minutes
- Cook Time: 20 minutes
- Total Time: 25 minutes
- Yield: 8 sausages 1x
Ingredients
- 1 pound ground chicken
- 4 tablespoons Purely Pecans pecan butter
- 2/3 cup diced apple
- 2 tablespoons unsweetened shredded coconut
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375 degrees
- Combine the ground chicken, pecan butter, diced apple, unsweetened coconut, cinnamon, and salt. Mix well to combine
- Scoop out 1/3 cup of the ground chicken and use wet hands to form the mixture into balls, then flatten into patties
- Place the patties on a parchment-lined baking sheet and bake for 20 minutes
- Serve warm or let cool and refrigerate for later
