  1. Pulse 1/2 head of cauliflower florets in a food processor to get small chunks, rice-like in shape. Set aside. Sauté garlic and diced onions in oil over high heat, add carrots and toss until tender.
  2. Add scrambled eggs, coconut aminos, ginger, sesame oil and cauliflower rice. Cook a few minutes, until cauliflower rice has softened.
