I have a long list of favorite things, specifically favorite foods. Like a REALLY long list. And fried rice is right up there. If you’re reading this, I assume you share a love of fried rice with me. So what better new favorite to introduce than cauliflower fried rice. Low-carb, guilt-free, and delicious!
To start, pulse 1/2 head of cauliflower florets in a food processor to get small chunks, rice-like in shape. Set aside.
Sauté garlic and diced onions in oil over high heat, then add carrots and toss until tender. Add scrambled eggs, coconut aminos (or soy sauce), ginger, sesame oil, and cauliflower rice. Cook a few minutes, until cauliflower rice has softened.
Serve as a base for Asian-inspired dishes like Clean & Delicious Green Pepper Steak.
Meal Prep Tip
Make a large batch and freeze for later use. When ready to use, simply thaw and toss in a heated saucepan to revitalize.Print

This looks yummy! I’m gonna have to give it a try but just omit the eggs. 😛
Hi Katrina. You can totally omit the eggs, this will still taste great. Thanks for stopping by!
