Cauliflower Fried Rice

I have a long list of favorite things, specifically favorite foods. Like a REALLY long list. And fried rice is right up there. If you’re reading this, I assume you share a love of fried rice with me. So what better new favorite to introduce than cauliflower fried rice. Low-carb, guilt-free, and delicious!

This cauliflower fried rice makes an amazing base for Asian-inspired meals

Ingredients for healthy, Paleo cauliflower fried rice

To start, pulse 1/2 head of cauliflower florets in a food processor to get small chunks, rice-like in shape. Set aside.

Sauté garlic and diced onions in oil over high heat, then add carrots and toss until tender. Add scrambled eggs, coconut aminos (or soy sauce), ginger, sesame oil, and cauliflower rice. Cook a few minutes, until cauliflower rice has softened.

Serve as a base for Asian-inspired dishes like Clean & Delicious Green Pepper Steak.

Meal Prep Tip

Make a large batch and freeze for later use. When ready to use, simply thaw and toss in a heated saucepan to revitalize.

  • 1 cup thinly sliced baby carrots
  • ½ head of cauliflower (about 3 cups) florets

  • 1 tablespoon olive oil
  • 2 scrambled eggs
  • 4 tablespoons coconut aminos
  • ½ teaspoon ground ginger
  • ½ teaspoon sesame oil

Instructions

An easy recipe for cauliflower fried rice. Great alternative to carb-loaded traditional fried rice.

    i once made cauliflower crust and it was pretty good, but i love this idea of fried ‘rice’!! great healthy alternative 🙂

    I LOVE fried rice too! I’ve been wanting to make something with cauliflower rice, this is perfect for me! Now my mind is thinking of a million things I could make with cauliflower rice! YUM!
