Truth be told, I never planned on making anything like this – it just sorta happened. Luckily, those are always the best recipe creations!
After the birth of our second baby, we had a calendar full of family coming out to visit to see the newest little one. It was sooooo helpful yet left me with the petrified fear, “how will I do this on my own when they leave?”. People said you’d figure it out, and they are right – I guess I did, errrr I am still figuring it out.
One meal I made when we had our houseguests were these primal greek turkey burgers. SO easy to throw together and grill, but since I’m used to only cooking for my small little fam, I overestimated the amount of turkey I needed to feed more adults.
Fast forward – everyone leaves and I have this weirdish, pinkish ground turkey sitting in a container in my refrigerator. Every time I open the door it’s just THERE, staring at me. But I couldn’t figure out what to make with it – nothing sounded appetizing but I DO NOT let food go to waste, so I started to experiment.
“Something easy. Something I can reheat. Something really clean” – then balsamic ground turkey and apple breakfast hash came to fruition.
The lean ground turkey soaks up all the flavors of balsamic and cardamom so beautifully, I almost cried once I tasted it (blame it on postpartum hormones). Adding a diced apple just made this hash THAT much better, giving a little sweet to the savory, and a nice texture to the ground meat.
This breakfast is A-MAZING. ‘Specially with a big runny-yolked egg on top. HELLO LOVER. And it’s whole30 compliant, easy to make and reheat later, and perfect for a protein-packed meal to start your day. Just throw all the ingredients in a pan and watch the magic happen. It won’t take you long to whip this up – and you’ll devour it even quicker!
I’ll never be scared of leftover ground turkey again. Yes, it may look like a brain sitting in my fridge, but it’s breakfast perfection when all cooked, warm, and savory. Heck I even paired it with some cauliflower rice the next day and ate it for lunch. A turkey dish that has many roles – I like it.
Try adding raisins in addition to the apples to yield a sweeter hash. Add sautéed spinach or kale, broccoli slaw, or roasted red peppers to up your veggie intake. This balsamic ground turkey and apple breakfast hash is so versatile – just play and mix it up for endless options you’ll never get sick of!
Balsamic Ground Turkey and Apple Breakfast Hash
- Yield: 4-6 servings 1x
Ingredients
- 1 lb ground turkey
- 6 tablespoons balsamic vinegar
- 1/2 teaspoon cardamon
- 1/2 teaspoon salt
- 4 chopped green onions
- 1 large apple, diced (about 1 1/2 cups)
Instructions
- In a large saucepan, add the ground turkey and turn the heat to medium/high
- Brown the turkey and drain any grease
- Turn the heat to low
- Add the balsamic, cardamon, salt, green onions, and diced apple. Let cook approximately 5 minutes, until the diced apples softens slightly and mixture is well combined
- Serve on its own or add fried egg to top

I’m all about savory breakfasts, and especially one I could easily make for breakfast or dinner. Love the apple addition too since I’m sure it’s a nice savory sweet balance.
I’ve never had a breakfast hash, but I’ve seen you and Michele from Paleo Running Momma make some really epic hash breakfasts, and they make me want to just come over and eat breakfast with you.
Great flavors and comb here. I would whip this up without the turkey and throw in sweet potatoes or even Beyond Meat crumbles.
