5-Ingredient Paleo Mojito Cookies

A simple, paleo cookie that's eggless and made with only 5 ingredients, tasting just like a fresh mojito!


Optional Frosting


  1. Combine the almond flour, coconut sugar, melted coconut oil, lime juice and zest, and mint. Once the dough is well combined, place into the refrigerator for 30 minutes to chill
  2. Preheat oven to 350 degrees
  3. Roll the dough into a balls (roughly 1 1/2 tablespoon-sized scoops per ball) and place on a parchment-lined or non-stick cookie sheet
  4. Using the back of a glass cup, flatten the ball slightly. As an option, sprinkle tops of the cookies with more coconut sugar to avoid the dough from sticking to the glass. If it does stick, gently push it off to the side until removed, and place the flattened cookie dough on the pan
  5. Bake for 15 minutes, until cookies are slightly golden
  6. Remove from the oven and let cool
  7. To make the frosting, combine the coconut butter, lime juice and zest, and fresh mint. Add water as needed to thin the frosting to desired consistency. Spread the frosting on top of the cookies and garnish with more fresh mint if desired
