Hard Boiled Eggs with Olives
Making your own hard boiled eggs with Eggland’s Best classic eggs, organic eggs, or cage-free eggs, or picking up a package of their Organic Hard-Cooked Peeled Eggs is an easy, portable, protein-packed, pre-workout snack that’s great any time of day. Paired with your favorite olive variety for healthy fat – it’s a balanced (and easy) combo.
Prosciutto Wrapped Avocado
I just love this pairing. You simply can’t go wrong with avocado and prosciutto. These prosciutto-wrapped avocado slices are fun and tasty, and once again have protein and healthy fat for a great pre-workout option.
Microwave Mason Jar Omelette
If you haven’t tried the microwave omelette, you’re missing out. It’s a portable, fluffy, and totally customizable. Oh, and it’s breakfast in less than 2 minutes. YEP. When early morning workouts are your gig, try throwing together a microwave omelette with previously cooked bacon (or veggies), topped with avocado. It’s genius.
Ingredients:
• 2 Eggland’s Best classic, organic, or cage-free eggs
• 1 tablespoon coconut milk (or sub with almond milk)
• 1 slice pre-cooked bacon, diced (optional)
• avocado to top
Directions:
Mix the eggs, coconut milk, and bacon into an 8-ounce mason jar. Place in the microwave and cook for roughly 1 minute, 30 seconds (more or less depending on your microwave). The egg will look as if it will pour over the mason jar as it’s cooking, but the omelette mixture will go down once cooled. Top with fresh avocado.
Smoked Salmon and Raw Nuts
When you have zero time to throw anything together, pairing smoked salmon with a handful of mixed nuts and/or seeds is easy and simple, but packs some major nutrient-dense fuel. No salmon? Paleo Egg Salad
Not gonna lie, I slammed this about 30 minutes ago. Errands –> paleo egg salad –> barre class. Make this simple pre-workout snack the night before, refrigerate overnight, then throw it all into a container to bring with you the next day. I love how creamy and tangy it is, and these hard boiled eggs from Eggland’s Best have the best texture.
Ingredients:
• 2 Eggland’s Best classic, organic, cage-free eggs, or Eggland’s Best Hard-Cooked Peeled Eggs
• 1 teaspoon paleo mayonnaise
• 1/2 teaspoon dijon mustard
• dash of salt to taste
• green onions to top
Directions:
If using raw eggs, place into a pot of boiling water and cook for roughly 8 minutes, then submerge into an ice bath. Once eggs are cooled, remove the shell.
Cut the eggs horizontally, then flip to slice the top to cut the egg into fourths. Starting from right to left, dice the egg to desired size. Mix the mayo, dijon, and salt together, then add to the diced egg. Top with green onions.
