I have this theory.

It’s quite simple really.

That the people who value eating nutritious food are the people that should have the easiest meal options.

Right? RIGHT?!

Isn’t getting through the craziness of every day already nutty in itself? I don’t know about you, but often times I’m still in my bed-head ponytail at 11:30am and wondering HOW THE HECK IS IT ALMOST NOON?!

Now, if you get up at 9:30am, I’m not talking to you right now (not because I don’t like you…I’m probably just grumpy since my 5am wake up call). I’m talkin’ to the people of the world that zoom out of bed like some sort of jungle cat with mismatched PJ’s, getting their kids breakfast and dog out to potty asap. The ones who are trying to tame their wild children and wild email inbox before the sun is up. The ones that manage 8 billion different things every hour and find themselves shocked when dinnertime hits and they have no plan at all.

Luckily my people talk to me a lot through social media and they always say, “Chrissa, paleeeeease post more stupid-easy recipes I can get on the table quick without a ton of ingredients”.

An easy, healthy dinner in less than 15 minutes?! You better believe it with these honey lime-dressed shrimp kabobs and the sweet flavor burst of DOLE® Sweet Thai Bountiful Kit.

Sweet Thai Salad with Honey Lime Shrimp Kabobs

Sweet Thai Shrimp Salad

Ingredients

  • 1 package DOLE® Sweet Thai Bountiful Kit
  • 18 raw, tail-on shrimp
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 large lime, juiced

Instructions

  1. Preheat grill over medium-high (roughly 400 degrees)
  2. Arrange shrimp on kabobs
  3. Combine olive oil, honey and lime juice
  4. Brush mixture over kabobs to coat
  5. Brush grill with olive oil to ensure shrimp doesn’t stick
  6. Place kabobs on the grill and coat again with honey lime dressing
  7. Flip after 2-3 minutes, then coat once again
  8. Remove the kabobs from the grill after an additional 2-3 minutes cook time, until pink with slight char marks
  9. Arrange DOLE® Sweet Thai Bountiful Kit on a plate with the edamame, black bean, red rice, and sesame seed fresh pouch and sweet Thai chili dressing (included)
  10. Top with the shrimp and serve

Lentil Cucumber Salad with Turkey Burger and Sweet Potato Buns

Turkey Burger Cucumber Lentil Salad

  • Total Time: 17 minutes

Ingredients

  • DOLE® Lentil Cucumber Bountiful Kit
  • (4) 1”-thick cut sweet potato medallions
  • 2 teaspoons olive oil
  • 2 frozen turkey burgers

Instructions

  1. Preheat grill over medium-high (roughly 400 degrees)
  2. Coat sweet potato medallions with olive oil
  3. Place frozen turkey burgers on the grill and cover. Cook for 6-7 minutes, then flip
  4. Add the sweet potato medallions to the grill
  5. Continue to cook the turkey burgers another 6-7 minutes, and sweet potato medallions 3-4 minutes per side *turkey burgers should reach an internal temperature reaches 165 degrees
  6. Arrange DOLE® Lentil Cucumber Bountiful Kit on a plate with the marinated green, black, and red lentil fresh pouch and cucumber vinaigrette (included)
  7. Serve with turkey burger and sweet potato ‘buns’

Ingredients

  • DOLE® Fiesta Ranch Bountiful Kit
  • 2 6-8 ounce steak, or one large 16 ounce steak (ribeye or New York strip)
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

  1. Preheat grill over medium-high (roughly 400-450 degrees)
  2. Season steak with spices and let sit 5-10 minutes at room temperature
  3. Place steak on the grill and cook for 5-6 minutes per side for medium rare
  4. Arrange DOLE® Fiesta Ranch Bountiful Kit on a plate with the corn, black bean, and red bell pepper fresh pouch and taco ranch dressing (included)
  5. Serve steak with salad

  • 2 chicken breasts
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried onion flakes *optional

Instructions

  1. Preheat grill over medium-high (roughly 400 degrees)
  2. Combine spices and coat over the chicken breasts
  3. Grill for 7-8 minutes per side, until internal temperature of chicken reaches 165 degrees
  4. Arrange DOLE® Triple Quinoa Bountiful Kit on a plate with the red, white, black quinoa and chickpeas fresh pouch and lemon basil vinaigrette (included)
  5. Top with grilled chicken and serve
