I’m right smack dab in the tail end of a Whole30. And it’s been so much different this time around. Let me explain…
Previous Whole30’s have been fine, but I always had this preconceived notion in my head to stock up on all the compliant bars. You know, the ones that cost $3 a bar that are all to convenient to slam instead of reaching for veggies or making something quick at home.
Yes, I’m standing here naked (not really), admitting my Whole30’s haven’t been perfect. That’s why this round has been so refreshingly different. No store-bought bars or expensive compliant foods. Just real stuff without fuss. If I got hungry between meals I’d reach for a handful of grape tomatoes and olives, or a hard boiled egg, or sliced peppers and guacamole.
Or better yet, I’d grab a couple of these 3 ingredient strawberry pistachio energy balls. And they are SO much better than the bars I used to spend my kids’ college fund on…
3 Ingredient Strawberry Pistachio Energy Balls
I have another confession while I’m on the honest train, I don’t LOVE medjool dates. Now hear me out.
I use dates a lot in many recipes – I love them for that incorporating a touch of sweet in dinner dishes like these Sloppy Joe Bowls and my 20 Minute Orange Chicken. I use them in desserts instead of refined sugar…but I don’t love dates just as dates. So some of the compliant Whole30 bars that back a LOT of dates in each bite kind of send me into sweetness overload.
These 3 ingredient strawberry pistachio energy balls have dates – yes. But I tried to make these with as little dates as possible – still enough to keep the balls together but not overdoing it. Ya know what I’m sayin’?
Because I wanted every bite of these AMAZING snack to be full of crunchy pistachios and bursting with strawberry flavor. And they do. These 3 ingredient strawberry pistachio energy balls do not disappoint!! No more store-bought bars, no more blowing my Whole30 grocery budget.
Handling these 3 ingredient strawberry pistachio energy balls can be a bit tricky, since they are SUPER sticky. But I promise if you take the time to gently press together and form into bite-sized balls, it will be worth it. Soooo worth it.

Print3 Ingredient Strawberry Pistachio Energy Balls

A paleo and Whole30 compliant snack made with simple ingredients. Pistachio and strawberry flavor in every bite.
- Prep Time: 2 minutes
- Cook Time: 5 minutes
- Total Time: 7 minutes
- Yield: 12 balls 1x
Ingredients
- 7 medjool dates
- 1/4 cup pistachios
- 1/4 cup freeze-dried strawberries
Instructions
- Add the pitted dates and pistachios to a small food processor or mini chopper. Pulse or blend until the nuts have broken down and the mixture is well combined
- Then add the freeze-dried strawberries and pulse for 5-10 seconds, just until the strawberries have broken down and are incorporated into the date/nut mixture
- Scoop out a tablespoon at a time and press the mixture together, then gently form into a ball. These will be slightly crumbly, so rolling into a ball may not work as well as pressing and forming, in order to keep the mixture together. Wash hands every 2-3 balls to ensure the mixture doesn’t stick to your hands as you go
- Keep in the refrigerator until ready to eat. Yields 12 balls – double the recipe if needed
Notes
The mixture for these energy balls is more ‘crumbly’ than some other recipes for energy balls using dates, so be sure to form the balls carefully, pressing the mixture together first. You may not be able to roll the mixture into a ball like rolling play-doh, so pressing together then gently forming into ball shape is key.

I love the flavor combination but need to be weary of the type of blender. I used my bullet and it immediately turned the nuts and strawberries into dust, thereby hiding a lot of the flavor 🙁
